Cuban Citrus Garlic Salmon Recipe

- 4 6-8 oz. salmon filets
- 8 cloves of garlic
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lime
- 1 lemon
- 1 orange
- 1/2 large grapefruit
- 1 tsp white vinegar
- 1/2 medium yellow onion
- 1 tsp oregano
- Peel garlic, add salt and black pepper and mash into a paste in a medium bowl.
- Add lime juice, lemon juice, orange juice, vinegar, and juice of 1/2 grapefruit to garlic paste.
- Finely dice onion and add to mixture with oregano. Stir to combine.
- Reserve 1/2 marinade for topping salmon. Add salmon filets to remaining sauce, evenly coating. Cover and let marinate for at least 30 minutes.
- Place salmon filets skin side down and cover, 6-8 minutes, or until salmon flakes easily.
- Top with remaining marinade and cilantro. Serve with lime wedges.

- 1/2 large grapefruit
- 2 tsp salt
- 1/2 tsp black pepper
- 1 tsp Dijon mustard
- 2 tsp olive oil
- ½ tsp medium yellow onion
- 1/2 yellow bell pepper
- 1 14 oz. coleslaw mix
- 1 cilantro bunch
- Squeeze 1/2 grapefruit into a large bowl. Add salt, black pepper, Dijon mustard, and olive oil and whisk until well combined.
- Thinly slice onion and bell pepper into strips and add to bowl.
- Add Coleslaw mix and toss to combine. Garnish with chopped cilantro, and serve immediately.
