Southwest Turkey Burgers

These scrumptious turkey burgers are made with lean ground turkey breast, onions, peppers and Southwestern spices. Top them with sliced avocado and serve over a bed of arugula for a delicious, nutritious low-carb meal.

Prep time: 10 minutes

Total time: 25 minutes

Serves 4 

Ingredients

●  1 tablespoon olive oil, divided

●  1/2 white onion, finely chopped

●  1/2 red bell pepper, finely chopped

●  Salt and pepper, to taste

●  2 cloves garlic, minced

●  2 teaspoons ground cumin

●  1 teaspoon ground coriander

●  1 teaspoon smoked paprika

●  1 1/2 pounds lean turkey breast, ground

●  1 tablespoon balsamic vinegar

●  4 cups arugula

●  1 avocado, sliced 

Directions

  1. Heat 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add onion and

    pepper and saute until translucent, about 5 minutes. Season with salt and pepper, to

    taste.

  2. Add garlic, cumin, coriander, and paprika to the skillet and stir to cook until fragrant,

    about 1 minute. Remove skillet from heat and set aside.

  3. Place turkey breast in a large bowl and season with salt and pepper. Add vegetable

    mixture and balsamic vinegar, stirring to thoroughly combine, and being careful not to

    overmix. Form mixture into 4 patties and set on a plate.

  4. Wipe out the skillet with a paper towel. Heat remaining 1/2 tablespoon olive oil in skillet

    over medium-high heat and saute turkey burgers until golden brown, about 4 to 5

    minutes per side and internal temperature reaches 165°F.

  5. Arrange arugula on each of 4 serving plates. Place turkey burgers on arugula and top

    with sliced avocado. Serve hot.
