Ingredients: Balsamic Dressing: 3 tablespoons balsamic vinegar1 garlic clove, crushed to a paste1/2 cup olive oilSalt and freshly ground pepper Salad: 4 (5-ounce) tuna steaks, approximately 1 1/2 inches thickSea salt and freshly ground pepper1 tablespoon olive oil4 cups romaine lettuce, roughly chopped2 small heads endive, roughly chopped1/2 cup snow peas Instructions: Combine vinegar, garlic, oil, salt and pepper in a bowl. Whisk until thick and emulsified. Set aside.Season both sides of tuna with salt and pepper. Heat oil over medium-high heat. When smoking hot, add tuna and cook 1 to 1 1/2 minutes. Flip and cook another 1 to 1 1/ 2 minutes. Let rest 5 minutes. Thinly slice on an angle, against the grain.Toss lettuce, endive and snow peas with balsamic dressing. Season with salt and pepper.Top with seared tuna and serve.
