Treat yourself to low-carb, high-protein Egg + Avocado Toast: lightly toasted whole wheat bread topped with smashed avocado, lemon juice, a sprinkle of cayenne and a lightly fried egg.

Prep time: 5 minutes 

Cook time: 8 minutes 

Total time: 13 minutes

Serves 4 


●  1 ripe avocado

●  1 tablespoon fresh lemon juice

●  Pinch red chili flakes

●  Salt and pepper, to taste

●  1 tablespoon olive oil

●  4eggs

●  4 pieces whole wheat bread, toasted 


  1. Slice avocado in half and scoop flesh into a medium bowl. Add lemon juice and lightly

    mash to desired consistency.

  2. Add chili flakes, salt and pepper. Stir to combine, cover and set aside.

  3. Heat oil in a medium skillet over medium heat. Crack eggs into the pan, one at a time,

    being careful to keep yolks intact. Season eggs with salt and pepper and lightly fry, 1 to

    2 minutes per side, keeping yolk runny, if desired.

  4. Meanwhile, place toast onto 4 serving plates and top each with mashed avocado,

    spreading evenly. Top each toast with a fried egg and serve immediately.
