Ingredients:
- 3 Large Eggs
- 5 Shiitake Mushrooms, chopped
- 1 tablespoon Green Onions, chopped
- 1/4 teaspoon Black Pepper
Instructions:
- Heat a skillet over medium-high heat
- In a bowl, crack 1 egg with yolk and 2 eggs without the yolk, and whisk together with black pepper
- Saute the mushrooms and green onions for about 30 seconds
- Pour the eggs into the skillet
- While the egg is cooking, lif the edges with a spatula to allow the uncooked egg to flow under the cooked edges
- Place onions and mushrooms in the pan and fold the egg mixture in half to form the omelet
- Serve immediately
