Thai Chicken Soup Recipe

● 1 Tbs. red curry paste
● 1 1/2 C unsweetened coconut milk
● 1 C low-sodium chicken stock
● 1 Tbs. fish sauce
● 1 Tbs. raw honey
● 2 Tbs. natural peanut butter
● 10.5 oz. cooked, sliced chicken breasts (14 oz. raw)
● 1 C sliced red bell pepper
● 1/2 C thin-sliced yellow onion
● 1 C peeled, chopped carrots
● 2 tsp. fresh, grated ginger
● Lime wedge
● Cilantro for garnish
- Place curry paste, coconut milk, chicken stock, fish sauce, honey, and peanut butter in a stockpot and whisk together until well combined.
- Add chicken, red bell peppers, onions, carrots, and ginger. Cover and cook on low for six hours or on high for four hours.
- Top each serving with lime juice and cilantro.
- Serve immediately.
