Chimichurri is a South American staple in barbeques across Argentina, Uruguay, and much of Brazil. It features just a few simple ingredients, but this super-simple green chimichurri sauce elevates just about ANYTHING you put on your grill. Grilled chicken? Yes. Grilled steak? That’s what it’s made for! Grilled shrimp, fish, or veggies? Absolutely! You can use it with your favorite National Grilling Month recipe, or slather it on anything you make year-round. Plus, it’s low-carb and keto-friendly too. Follow the simple recipe below to learn how to make chimichurri sauce.

Chimichurri Sauce

Chimichurri Sauce Ingredients

● 2 C Fresh Italian flat-leaf parsley

● 4 cloves garlic

● 2-3 t Dried oregano

● ½ t Red pepper flakes (more or less to desired taste)

● ½ t Kosher salt

● Fresh ground black pepper

● ¾ c Olive oil

● ¼ c Red wine vinegar

● 2 T fresh lemon juice

Chimichurri Sauce Instructions

  1. Finely chop the parsley leaves and any tender stems and place them in a medium bowl.
  2. Peel and finely mince garlic and add to the bowl.
  3. Add in dried oregano, red pepper flakes, salt, and a few grinds of black pepper.
  4. Add the olive oil and lemon juice, and slowly add the red wine vinegar. Taste as you go and add more oil if it’s too sour, or additional vinegar/lemon juice blend if needed.
  5. Season to taste with additional salt and pepper.
  6. For best results, cover the sauce and let it sit on the counter for 1-2 days before serving.

What is Chimichurri Made From?

The best chimichurri sauce is made from fresh herbs and spices. The virgin olive oil, fresh parsley, garlic cloves, and lemon juice are the absolute stars here, so make sure to use the fresh stuff. Olive oil doesn’t last forever, and it may lose flavor as it ages, so be sure yours is still good before you add it to the chimichurri. How Long Does Chimichurri Last in the Fridge?

It’s best to assemble this make ahead chimichurri sauce recipe a few days in advance so the flavors have time to meld and build for optimum deliciousness. It will stay fresh for about a week on the counter, or two to three weeks in the refrigerator. If you are refrigerating the sauce, you’ll notice the oil congeals when it is chilled. That is totally normal. Simply allow the sauce to come to room temperature and give it a quick stir before you serve it.
