Low Carb Mexican Pizza Recipe - Low Carb Approved

Whether you’ve just completed the Xyngular 8-Day Jumpstart program, or are just looking to keep things low carb, this Mexican pizza recipe is a winner. What’s a low carb Mexican pizza, you ask? Think of it as an open-faced taco piled high with all your favorite Mexican ingredients. If you’ve tried our low carb basil chicken and veggies recipe, or the garlic chicken with sautéed zucchini recipe, you know it’s possible to pack a lot of flavor into a low carb meal. This Mexican pizza recipe is a real crowd pleaser, and a great variation from typical low carb dishes.

INGREDIENTS

  • 4 Brown rice tortillas
  • 10 oz. Lean ground beef
  • 3 Tbsp Taco seasoning
  • 8 Tbsp Salsa
  • 12 Tbsp Shredded low-fat mozzarella cheese
  • 1 cup Diced tomatoes
  • 4 Tbsp Green onion
  • 4 Tbsp Nonfat Greek yogurt (coconut milk yogurt for a dairy-free option)
  • 4 cups Shredded romaine lettuce

INSTRUCTIONS

  1. Preheat oven to 350° F
  2. Brown ground beef in a pan over medium heat. Add taco seasoning and mix thoroughly. Remove from heat.
  3. Lay tortillas out flat on a baking sheet and spread 2 Tbsp of salsa over the top of each one.
  4. Add 3 Tbsp cheese and 2 oz cooked ground beef to each tortilla.
  5. Bake for 10 minutes, or until cheese is melted.
  6. Top each serving with 1 cup shredded lettuce, ¼ cup fresh tomatoes, 1 Tbsp Greek yogurt, and 1 Tbsp green onions.

Pizza definitely isn’t a forbidden food on a low carb diet. Now before you start dialing the number for your favorite local pizza parlor, there IS a catch. Most pizza comes on a fluffy, delicious, carb-filled crust, and that doesn’t exactly work with a low carb diet plan. But don’t despair, because there are a lot of low carb pizza recipes out there that allow you to get your fix without sabotaging everything you’ve worked so hard for.

A lot of pizza chains now offer a low carb pizza option. It’s worth looking into when going out to eat. If you’re staying in, you can easily make a delicious pizza that’s low in carbs. Crust is the trickiest, and we’ll talk more about that later. For the sauce, you’ll want to look for a low carb pizza sauce option, or make your own, like the one in this recipe. Low fat mozzarella cheese is a traditional pizza cheese, and luckily for you, it’s also low in carbs. Finally, top your pizza with veggies and lean meats to keep it low carb friendly.

What Is The Best Low Carb Pizza Crust?

Traditional pizza crusts are packed with carbs, but there are several alternatives you can choose. Be warned though, sometimes low carb crust options are higher in calories. Pay close attention to the calorie count when selecting a low carb alternative. That being said, a popular low carb pizza crust alternative is a cauliflower crust. Cauliflower is naturally low in carbs and makes a great pizza-like crust. You can also buy crusts made from chickpeas that are similar to the cauliflower variety. Low carb pizza crust mixes, thin, whole wheat crusts, and certain kinds of tortillas are also options when you’re trying to cut carbs.

What Are The Best Low Carb Tortillas?

There are a lot of different varieties of tortillas on the market, so it’s hard to know which one is best for a low carb meal plan. For this healthy Mexican pizza recipe, we went with a brown rice tortilla, which has about 130 calories and 24g of carbs, compared to a standard tortilla that has about 170 calories and 26g of carbs. We also like how the brown rice tortilla gets crispy when cooked.

Other low carb tortilla options include almond flour tortilla (200 calories and 20g carbs), coconut wraps (70 calories and 6g carbs), paleo wraps (90 calories and 15g carbs), low carb tortillas (60 calories and 7g carbs), and cauliflower tortillas (120 calories and 25g carbs).

Our Favorite Low Carb Pizza Toppings

The kinds of pizza toppings you use depends on the kind of pizza you’re making. For this Mexican pizza recipe, we chose Mexican pizza toppings like peppers, onions, and tomatoes. You can also get creative with bell peppers, mushrooms (these are very low carb), Brussels sprouts, spinach, broccoli, tomatoes, onions, artichokes, chicken, lean ground beef, and even bacon (use this one sparingly because it’s higher in fat and calories) to make your perfect low carb pizza.
