Raw Vs. Cooked Spinach

Spinach is an incredibly healthful food that contains beneficial nutrients whether it is consumed raw or cooked. Eaten raw, spinach still serves an incredible amount of potassium, riboflavin, folate, vitamin c, and niacin. However, when spinach has been heated, it absorbs higher levels of protein, fiber, zinc, iron, calcium, vitamins A and E as well as several carotenoids. The good news about cooked spinach is that it does not break down when heating, so there is never a loss of nutrients. Raw or cooked, you can’t go wrong nutritionally with spinach.
