I’m sorry that I said you were gross when I was a kid. I blame it on my then-undeveloped prefrontal cortex...or maybe the fact that you were green and that scared me for some other mystifying 6-year-old reasoning. Even though you benefited Popeye so clearly, I doubted you. And I realize now how foolish that was.

I’ve done my research and I realize that you are a wonder of all wonders! Full of nutrients and fat-burning qualities, freshness, and perfectly mild flavor, I admit that I now eat you almost daily! On your own, in my new favorite spinach salad recipe (see below!!), blended into smoothies—your delicious possibilities are endless.

Spinach Salad Recipe

Nutrition Facts Per Serving

Calories: 284 / Fat: 24g / Protein: 11g / Carbs: 12g

SALAD INGREDIENTS

  • 11 oz baby spinach
  • 4 hard-boiled eggs, sliced
  • 1 C broccoli, chopped into small florets
  • 2 C cauliflower, chopped into small florets
  • 1 cucumber, sliced
  • 2 Tbs. unsalted toasted almonds

HEALTHY SPINACH SALAD DRESSING INGREDIENTS

  • ⅓ C extra virgin olive oil
  • 3 Tbs. apple cider vinegar
  • 2 Tbs. Dijon mustard
  • 2 Tbs. low sodium soy sauce

INSTRUCTIONS

  1. Combine spinach, eggs, broccoli, cucumbers, cauliflower, and almonds in a large bowl. Set aside.
  2. Combine olive oil, apple cider vinegar, Dijon mustard, and soy sauce in a separate bowl. Mix until well combined.
  3. Pour dressing over salad and toss to coat evenly.
  • Serve immediately.
