Cuban Citrus Garlic Salmon - Low Carb Approved

If you’re looking for low carb dinner ideas, look no further than this recipe for cuban citrus garlic salmon. Salmon contains loads of healthy nutrients and vitamins but absolutely zero carbs. Add this zippy marinade for a delicious meal that will be requested time and time again. Serve it with the light and refreshing grapefruit cabbage salad. Enjoy!

Cuban Citrus Garlic Salmon Recipe

Ingredients:

  • 4 6-8 oz. salmon filets
  • 8 cloves of garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lime
  • 1 lemon
  • 1 orange
  • 1/2 large grapefruit
  • 1 tsp white vinegar
  • 1/2 medium yellow onion
  • 1 tsp oregano

Directions:

  1. Peel garlic, add salt and black pepper and mash into a paste in a medium bowl.
  2. Add lime juice, lemon juice, orange juice, vinegar, and juice of 1/2 grapefruit to garlic paste.
  3. Finely dice onion and add to mixture with oregano. Stir to combine.
  4. Reserve 1/2 marinade for topping salmon. Add salmon filets to remaining sauce, evenly coating. Cover and let marinate for at least 30 minutes.
  5. Place salmon filets skin side down and cover, 6-8 minutes, or until salmon flakes easily.
  6. Top with remaining marinade and cilantro. Serve with lime wedges.

Grapefruit Cabbage Salad Recipe

Ingredients:

  • 1/2 large grapefruit
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Dijon mustard
  • 2 tsp olive oil
  • ½ tsp medium yellow onion
  • 1/2 yellow bell pepper
  • 1 14 oz. coleslaw mix
  • 1 cilantro bunch

Directions:

  1. Squeeze 1/2 grapefruit into a large bowl. Add salt, black pepper, Dijon mustard, and olive oil and whisk until well combined.
  2. Thinly slice onion and bell pepper into strips and add to bowl.
  3. Add Coleslaw mix and toss to combine. Garnish with chopped cilantro, and serve immediately.
